I offer an extensive menu with a wide variety of flavours from Mexican, Indian, Middle Eastern, Moroccan, Miscellaneous, …having said that, we can have whatever we want, we can mix things up; there are no rules!

Although I work with the seasons, certain dishes are available year round with adjustments to suit the time of year.
India, an ancient land with a rich tapestry of wisdom and culture. Through their food, each dish carries with it centuries of culinary tradition, regional diversity, and cultural significance.
I’m not claiming to be fluent in the art of all Indian cooking! However, we can celebrate these unique flavours through variations I have developed and a personal style I have created over the years.
It works best when you have ‘all the bits’ together. A combination of earthy organic veg, lentils, split peas, black and white rice, nuts and herbs, spices, pickles, dips along with a crisp and a crunch, it’s a big warm bowl full of soul.
Mexican food relies largely on very fresh ingredients like corn, beans, tomatoes, chilli's, peppers, citrus, spices, fresh herbs and avocados. Along with crispy tacos, flatbreads and red and white rice, it’s highly nutritious with a bright and bold visual appeal - it’s a plant based dream.
Mexican meals are typically served family-style, with dishes placed in the centre of the table for everyone to share. The portions are also usually very generous. This makes it easy for people to customize their plates by choosing from a variety of side dishes, fillings, toppings, and salsas to create a flavour combination that suits their preferences.
I’m not a traditional Mexican chef! And that’s ok, because I’ve been making my own versions of these favourites for so long now, I can absolutely bring a bright and bold Mexican night together!
Cooked ancient grains, organic vegetables carefully balanced with Nature’s carbs, protein, dressings, fruit, nuts, seeds and fresh herbs. Salads will flow through the year in harmony with the seasons. This is why you might see a lot of some things during certain months then not again until the following year, but there’s always another favourite coming into season! This is a massive step towards being conscious about what we eat, and what keeps our food interesting, honest and true.
The choices and combinations are endless… From thick and chunky lentil & potato stew, to light & earthy mushroom & coconut soup to a delicate Asian broth with big flavours!
While I encourage a focus on vegetables, I also understand that some guests may enjoy bread as part of their big bowls… So, if you want bread, of course, you can have bread! But I ensure that the overall menu keeps the emphasis on nutrient-rich foods, helping them to avoid energy crashes during the day.
Every plate needs a touch of glitter! In my case, that glitter comes in the form of fresh herbs, aromatic spices, various roots, pickles, dips, toasted nuts and seeds.
As a thoughtful chef, I will come prepared with jars of homemade relish, chutney, pickles, dips, sprouted beans or fermentations that have had time to develop and are ready to be served.
Glittering elements are not just about aesthetics, they help to pack as much diversity and flavour into the food as possible
I LOVE vegetables, fibre & pulses in cakes! Beetroot, courgette, carrots, sweet potatoes, black beans, chickpeas, avocado…
These ingredients are as close as nature intended, and our bodies know exactly what to do with them. They serve and nourish us and leave us feeling satisfied, but without any of the guilt or crashes from refined white sugar, chemical sweeteners and processed flours.
Also, you're far less likely to go back to finish the ‘whole cake’ when eating sweet things such as these, but even if you do, (like me) that's ok too!
